Tom Kha Kick Ass Coconut Soup

It’s no secret that I’ve always had an obsession with soups, it’s been my comfort food forever so I always make sure I buy/make healthy soups with good quality ingredients. I also love Thai food and there is something so soothing about Tom Kha Coconut Soup. Perfect spice, perfect warmth, lots of vegetables!

It also has great antibacterial properties from the coconut and lemongrass as well as the ginger – so it’s a great digestive soup overall!

Tom Kha Kick Ass Coconut Soup

Ingredients:
2 tbsp extra virgin olive oil or coconut oil 1 onion sliced into large chunks
1 ½ tbsp thai red curry paste – or tomato paste and add extra garlic, ginger – ensure gluten free certified
2 inches fresh ginger – grated
4 cups low sodium organic chicken/vegetable stock (or half water half stock) – ensure gluten free certified
1 cup water
14oz lite coconut milk
2-3 stalks lemon grass – cut into inches and sliced down the centre
Juice from half lime – and ½ lime zest
Sliced mushrooms and thinly sliced sweet red pepper (roughly 1 – 2 cups)
2 green onions sliced small (more for garnish)
Small handful of bean sprouts (1 – 2 cups)
1 small chilli pepper without seeds or red pepper flakes (optional for spice)
10 – 15 cooked medium shrimp or sliced chicken
Large bunch of Kale, chopped

Directions

1. Heat oil and onion and then add red curry paste only for 30 seconds. Add uncooked meat if necessary – otherwise add cooked protein after

2. Add coconut milk and soup stock and ginger and bring to a boil

3. Add lime juice, lime zest and lemon grass

4. Add sliced vegetables and cook until just soft (roughly 15 – 20 minutes), after everything is almost cooked add in Kale and let simmer until wilted (another 5 minutes or so)

5. Remove Lemongrass stalks or just remember not to eat them. Garnish with green onions and red pepper flakes
