Jerk Seasoning – a homemade spice mixture!

Is there anything better than having a meal full of flavour that doesn’t come from a condiment? That’s this right here! A dry rub for a jerk seasoning that you can keep on hand and sprinkle whenever you need it. My favourite is using this on chicken – either chicken thighs, drumsticks or breasts. You don’t even need to add oil but you can rub a bit before sticking the mixture if you want. To make this extra healthy for you – buy organic chicken!

Dinner - jerk seasoning

Jerk Seasoning

created by Sarah Maughan

4 tbsp onion flakes
2 tbsp onion powder
2 1/2 tbsp thyme, ground
1 tbsp tsp allspice
1 tsp nutmeg
1 tsp cinnamon
1 tbsp black pepper
1 – 2 tsp cayenne pepper (depending how spicy you like it)
1 tsp sea salt

Mix all together and store for awhile or add about 1 tbsp of the mixture to chicken, ribs or anything you like! You can rub the meat in some olive oil if you want but it’s not necessary. Grill or bake.
