Fall for Granola – and gluten free!

This is a mixture of my favourite Fall flavours – apples, walnuts cinnamon and ginger. Sounds like an apple crisp right? It could be! It can be made gluten or wheat free and contains virtually no refined sugar. I say virtually because we all know what covers crystallized ginger – feel free to add dried fruit juice sweetened cranberries as a replacement, I just really loved the extra ginger kick today!

“Fall” for Granola

4 cups quinoa flakes (or gluten free rolled oats)
2/3 cup chopped walnuts
3 tbsp ground flax seed
4 tsp cinnamon
1 ½ tsp ginger
2 egg whites
½ tsp sea salt
3 tbsp coconut oil
½ cup buckwheat honey (or other type)
2/3 cup chopped dried apple
8 (1/4 cup) chunks crystallized thai ginger, sliced small


  1. Mix dry ingredients together except dried apple, sea salt and thai ginger
  2. Beat egg whites and sea salt until frothy and then mix honey and melted oil
  3. Combine together and bake 350F for 20 minutes, then stir so outside edges are now on the inside, bake another 10 minutes until golden brown
  4. Stir in crystallized ginger and apple slices
