Cheesy Christmas Frittata

Do you enjoy brunch on christmas morning? Then you’ll love this recipe! And it’s not just because it looks like christmas. That’s just a bonus.

Fritatta’s are great to make because it serves a lot of people, easy to make, and it can be made ahead of time. No stress!


Cheesy Christmas Frittata

serves 6 (or 4 as a full meal)

2 tbsp extra virgin olive oil
8 eggs
8 egg whites
4 packed handfuls spinach, chopped
½ red pepper, finely chopped
¾ cup cottage cheese (leave out if you can’t have dairy, it’s not important)
¼ tsp herbamere sea salt (or regular sea salt)
1 tsp basil
2 tbsp water

1. Preheat oven to 400F

2. Heat olive oil in a pan with chopped spinach and red pepper until spinach has wilted.

3. Beat eggs and egg whites with basil, herbamere, 2 tbsp water and sea salt.

4. Pour eggs into a round quiche pan (or cast iron skillet, in this case add to top burner and cook for 2 – 3 minutes and then add to oven) and then add wilted spinach and pepper evenly. Using a spoon, add dollops of cottage cheese – 1 in the centre, 6 around the quiche pan so each slice gets a dollop.

5.Add to preheated oven and bake for 40 – 50 minutes until knife cuts down the centre without liquid egg mixture sticking to it.

When baked, the green, red and white will look like Christmas! Yup, nutrition nerd front and centre.
