Basic Gluten Free Dairy Free Vanilla Cake

If you’re gluten free like I have been for the last decade, having a go-to for a basic gluten free vanilla cake is key. It’s even evolved so much over the years – it no longer has xanthan gum, white rice flour was replaced with brown rice flour, corn starch was replaced with arrowroot starch, and believe it or not I opted to replace the whole eggs with egg whites because the texture was just so much lighter and fluffier and it really made this cake what it is today even though I know whole eggs are more nutritious.

I’ve been experimenting with removing the tapioca starch/flour altogether so you may even see another version up very soon!

Basic Gluten Free Dairy Free Vanilla Cake

4 egg whites*
¾ raw cane sugar, finely ground (or 1/2 cup honey**)
2 tbsp coconut oil, melted
¾ cup brown rice flour
2 tbsp arrowroot starch
2 tbsp tapioca starch/flour
¼ tsp sea salt
1 ½ tsp baking powder
3 tbsp lite coconut milk (use 2 tbsp if using honey**)
1 ½ tsp vanilla extract

  1. Preheat oven to 325F
  2. Beat egg whites and sea salt until stiff
  3. Add in sugar/honey and melted oil
  4. Mix dry ingredients together and slowly add (if using stand mixer) otherwise fold in flours
  5. Using a stand mixer or hand mixer beat on slow speed until all lumps are gone and everything is mixed
  6. Speed up mixer to high to add in coconut milk and vanilla
  7. Add to 1 round 8” cake pan and bake 25 – 30 minutes (I used a glass baking dish with a round piece of parchment paper lining only the bottom)

*I use egg whites instead of the full egg because it actually made a fluffier cake with a better texture. Otherwise whole eggs are preferred to bake and eat.
**The honey makes a much denser and stickier cake
